Don’t hate me for this as this little treasure is positively dangerous but the most amazing thing is that it’s a microwave cake recipe and it works.
DANGEROUS 5 MINUTE CHOCOLATE CAKE (serves 2)
4 tablespoons flour
4 tablespoons sugar (I only use 2 as I don’t like it as sweet)
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil (I only use 1 tablespoon and it’s worked)
3 tablespoons chocolate chips (optional) (I like it plain but have added some coconut instead)
A small splash of vanilla extract
1 large coffee mug (MicroSafe)
Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.
Pour in the milk and oil and mix well..
Add the chocolate chips (if using) and vanilla extract, and mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts.
The cake will rise over the top of the mug, but don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired.
And why is this the most dangerous cake recipe in the world?
Because now we are all only 5 minutes away from chocolate cake at any time of the day or night! |

EASIEST DESSERT IN THE WORLD.
sour cream, brown (or demarara etc) sugar, fruit. Mix sourcream and sugar and use it for dipping fruit into. YUM!!!! |

Chocolate Dream Slice
1/2 cup melted butter
1 cup brown sugar
2 tbsp cocoa
1 tsp vanilla
1 egg
1 cup SR flour
1/2 cup coconut
Icing:
1 cup icing sugar
1/2 tsp vanilla
1 tbsp butter
1 tbsp cocoa
hot water
Mix butter, brown sugar and cocoa in a large bowl. Beat egg and vanilla and add to bowl. Add flour and coconut to bowl and mix. Press in a greased slice tray and cook in a moderate oven for 180C for 20 minutes. Add icing sugar, cocoa, vanilla and butter in a large bowl. Add enough hot water to make a thick paste. Spread icing over cake mixture as soon as it comes out of the oven.

Sour Light Cream Apple Slice
1 pkt vanilla cake mix
1 cup coconut
750 g pie apples
125 g butter, melted
500 g sour light cream
cinnamon
Mix cake mix and coconut with melted butter. Press into lamington tin. Bake for 10 minutes or until brown. Cool. Spread apple over base, then spread sour cream over apples and sprinkle with cinnamon. Bake for 10 minutes at 180º C. Keep in refrigerator.
Just making this...it is so easy and yummy. If you have apples you have stewed yourself go for it.....always nicer than the tinned stuff and you can add cinnamon and whatever you like to it. this is a slice that gets better after a day...if it lasts that long....lol |

IMPOSSIBLE PIE - This is nice hot or cold, great to take on picnics with salad.
2 teas oil
3/4 robur pastry mix
1 and half cups milk
4 eggs
3/4 cup grated cheese
1 cup bacon/ ham/ left over chicken / any meat
parsley
salt and pepper to taste
Heat oil, cook onion, bacon and chicken (if using chicken fillets) until soft
mix all together, bake in pie dish 180 for 45 mins. |

Mini Quiches
Packet of Shortcrust pastry
2 eggs
¼ cup grated cheese
2 egg yolks
300ml cream
salt/pepper
Chopped ham
Shallots
Corn kernels
Lightly grease a *** in pan and line with pastry. (The bottom of a 375 gram milo tin is a good size, used as a cutter, makes a good circle) I use my largest scone cutter and use flat based patty cake tins….think they are gem cake tins.
Combine the ingredients in a bowl.
Spoon mixture into pastry.
Cook for 15 minutes in a moderate oven.
Options:
 You don’t need salt and pepper.
 I add three or four eggs.
 Add extra cheese, don’t scrimp on ham or shallots.
I am a savoury person peoples...lol.....love my savoury stuff! |

Savoury *** ins
4 bacon rashers, chopped
2 shallots, chopped
2 cups self raising flour
½ cup grated cheese
1 cup corn kernels, drained
1 egg, lightly beaten
1 cup milk
1 ½ tablespoons margarine, melted
Place bacon and shallots in a small pan. Cook over medium heat until bacon is cooked but not hard. Allow to cool.
Sift flour into a bowl. Add bacon, cheese and corn and mix.
Make a well in the centre and pour in egg, margarine and milk and mix well.
Spoon mixture into well greased *** in pans and bake in a hot oven (200-220°C) for approx 20 minutes.
Serve warm with butter.
Gwenda’s Secret Options:
 I cook the bacon and shallots in the microwave.
 Do not over mix when combining flour and bacon etc.
 I just use the diced bacon from Coles deli, make sure bits aren’t too big.
 I don’t actually measure the bacon, shallots or cheese, I just put in what I think is a good amount. I definitely use more than the recipe suggests.
 I add back in some of the retained corn juice to make a moister mixture than recipe. It also puts a nice gloss on top.
 Use margarine to grease your *** in pans, browns and flavours the mixture nicely.
 The new silicon, bendy cake pans are fantastic, no sticking.
