Kick-start diet vegetable soup
PREPARE 10 mins
COOK 15 mins
SERVES 8
1 kg Carrots
4 Celery Stalks, including leaves
1 bunch Spring Onions
4 medium Tomatoes
3 Green Capsicums
150 g Green Beans
1 cup Chopped fresh herbs, eg parsley basil and chives
1 litre CONTINENTAL* Real Chicken Stock
MASTERFOODS* Black Pepper Grinder
1 tspn JENSENS* Crushed Garlic
2 x 810g cans ARDMONA* Crushed Tomatoes
1. Place vegetables and garlic into a large saucepan. Cover with stock and bring to the boil.
2. Reduce heat and simmer for 5 minutes or until vegetables are just tender.
3. Add canned tomatoes and bring soup back to the boil. Reduce heat and simmer for a further 5 minutes. Stir in herbs and season with pepper.
4. Ladle into bowls to serve.

Thanks for letting me know what they are called, I had no idea. I went to a banding doctor's Christmas party for bandsters and they were serving them there, along with soup shots lol. The soup shots were actually a great idea, they had some really lovely home made flavoured soups like Thai Coconut Pumpkin, I've since served soup shots at get-togethers and they always go over really well. They look best served in a small clear strong plastic cup or in a plastic wine glass and you just put around 100ml in each.
Back to Blinis, I have Googled it and found out they are Russian Pancakes and a whole new world of recipe ideas has opened up for me. They were a great hit at lunch today and are so easy to make.

Has anyone tried when cooking Pikelets, instead of greasing the pan with butter as the recipe says greasing a non-stick pan with spray oil and does it work?

One nice liquid My daughter and i tried tonight, after having it in a indian restaurant the other weekend, was a mango lassie;
1 cup of mango, which you can buy tinned if no fresh
2 cups of plain yoghurt
1 cup of pineapple with the juice would make it more liquid although not meant to be in this recipe
some vanilla or cardamon for flavour
and whiz up in blender, i added some milk to make it a bit more of a liquid consistency, this was divine and my hubby even liked it!! I was trialling this ready for next week after my banding surgery, think it may become a fav

Tried this one tonight .. It's very yumm and the crock pot makes the meat as soft as butter.
Mushroom Casserole in the crockpot.
600g Gravy Beef or Stewing Beef
1 packet of cream of mushroom soup
1 can of sliced butter mushrooms
as many fresh mushrooms as you wish to add (I added 1 large punnet of sliced mushrooms)
1 and 1/2 teaspoons sweet paprika
Brown meat and then combine with the rest of the ingredients in the crock pot.
Slow cook for about 8 hours. Serve with veggies, great comfort food and cheap to make. |

I know exactly what you mean and this recipe is very similar. It is also similar to an Italian one I had visiting friends as a child. Depending on where you live you may find those beans in a continental deli. I havent got a snowflakes chance in hell of getting them where I live. |

Easy Crockpot Spaghetti Sauce
500g lean ground beef
2 cans diced tomatoes with juice
1 cup chopped onion
1 can tomato sauce
1 can tomato paste
1/2 cup chopped green capsicum
1 to 2 tablespoons sugar
1 to 2 teaspoons salt, or to taste
2 cloves garlic, crushed
2 teaspoons dried leaf basil
dash ground red pepper or red pepper flakes (paprika), if desired
Brrown mince in a heavy skillet breaking up while browning. Drain well.
Add mince to crockpot, along with all remaining ingredients. Cover and cook on LOW setting for 8 to 10 hours or HIGH for 4 to 5 hours. Serves 8 to 10.
This sauce can be frozen. |

I found this one on the Novaris web site and it was such a hit at home I had to post it... I think it would also be great for the mushies stage if you wizz up the strawberries before serving.
LOW FAT PANNACOTTA WITH FRESH STRAWBERRY SAUCE
Panna Cotta
1 can low fat (1.6%) evaporated milk (375ml)
1 tabsp grated lemon rind
1 teaspoon pure vanilla essence (5ml)
½ cup sugar (110grams)
1 cup Natural Greek yoghurt (250ml)
2 tabsp lemon juice (40ml)
1 tabsp water (20ml)
2 ½ teaspoon gelatin 6.5grams)
1. Simmer but do not boil milk with lemon rind for 5 minutes.
2. Remove from heat and sieve and discard lemon rind.
3. Stir in vanilla essence, sugar and yoghurt.
4. Mix lemon juice, water and gelatin together in a glass-measuring cup.
5. Let stand for 5 minute and then heat gently in microwave to melt.
6. Add to milk mixture.
7. Spray 6- ½ cup ramekins or small teacups with oil.
8. Divide Panna Cotta between them. This may be made in bowl instead.
9. Cover with plastic wrap and refrigerate for at least 12 hours or overnight.
10. If time is short, freeze for 1 hour first.
11. Ease Panna cotta around the top of mould and then dip ramekin in hot water for 30 seconds.
12. Unmould on to plate.
13. our 2 tablespoons of chilled strawberry sauce over each Panna Cotta and serve.
STRAWBERRY SAUCE
½ punnet washed, hulled and finely chopped strawberries (100grams)
2 tabsp caster sugar
¼ cup water
1. Mix strawberries, sugar and water together.
2. Microwave for 2 minutes.
3. Chill.
4. Serve with Panna Cotta

Your recipe brings back wonderful memories of when I was Greek Island hopping and fell in love with what I call their "Baked Beans" obviously that wouldn't be the real name but I don't know what the real name of the recipe is. Would you or anyone know where I can buy the extra large beans that the Greeks use, they are about three or four times the size of a baked bean?

Real Baked Beans (Approximately 8 bandit serves)
2 Chorizo sausages
1 onion finely chopped
1 tablespoon olive oil
1 tablespoon Balsamic Vinegar
1 can crushed tomatoes
4 tablespoons tomato paste
2 cans Canellini beans
Finely chop Chorizo sausage (even if you find you cant eat it, include it in the cooking process because the flavour is very important, just pick it out later)
Fry until golden brown, remove sausage and drain fat from pan
Add a tablespoon of olive oil and cook onions until golden (dont burn)
Return sausage to pan and add tin of tomatoes, tomato paste and beans and balsamic vinegar. Add a can of water and mix well
Cook over a low heat stirring regularly until it thickens up
This is so yummy. Serve with crusty bread or toast fingers for non-bandit family members. Makes a delicious brunch and also freezes very well. |
