Yes you could use any type of bread, that is just what I used as I happened to have about a 1/3 loaf of uncut white bread that needed using. You could halve the recipe if you wanted to.

I make up my recipes going by what I have in the cupboard/fridge at the time.

Thanks for the recipe Marion, 1/3 loaf bread is lot, could I use multigrain bread as I have type 2 diabetes, I'm not suppose to eat white bread. Looks delicious

TUNA FRITTERS

Filling
1 large tin of tuna in spring water
1/3 loaf of white bread
2 eggs
2 tablespoons sweet chilli sauce
150gms grated tasty cheese
herb and garlic salt

Batter
1 egg
200 gms self raising flour
cup of milk
water as needed
Olive oil to fry

Process the bread into bread crumbs in food processor
Add eggs, cheese, sweet chilli sauce and seasoning.
Process again until starting to clump together
Drain tuna and add to rest of ingredients.
Process until blended and formed into a smooth firm paste
Take pieces about the size of a large egg, roll into a ball
and then flatten. Do this to all the mixture. Put patties
into the fridge or freezer while you make the batter.

Clean food processor bowl and reattach.
Put the flour, egg and milk into the bowl and process to
a smooth batter. For this recipe batter should be of a
fairly thin consistancy, just coating the back of a wooden
spoon. If it is too thick add cold water a little at a time
until the right consistancy is achieved.

Put olive oil into a non stick fry pan to a depth of about
2cms. When oil is hot, coat each pattie by impaling ()
on a fork and dipping into the batter to completely coat.
Carefully drop into the hot oil. Cook the patties in batches
of about 4 at a time. Using a teaspoon put a little batter
into any holes left by the fork. When golden on one side
carefully turn them over and cook until golden on the other.
Scoop out of oil and place onto kitchen paper to soak up
excess oil. Continue until all patties are cooked.

This should make about 15-16 fritters, they can be frozen
on a bread board and then put into a large zip lock bags
and used as needed.

Serve with a thick tomato sauce or mayonaise and salad.

Kids will love them as the fish flavour isn't too strong.

And another (very similar):

1 litre of chicken stock, boil the cauliflower in it then whiz it all up and add a wheel of brie cheese :)
if you want a change you can use half and half cauliflower and brocholli :) I am told a packet of french onion soup in there works great as well even if you do not want to add the cheese to that one :) I have also heard of boiling the cauliflower in chicken stock then poping it in a couple of tins of skinny cream of chicken soup and buzzing it down and not using the cheese.

Here's one I found:

1 ltr chicken stock
1 large cauli
1/2 onion
125gm wheel camembert cheese

chopped cauli & onion & boiled in chicken stock until really soft. added salt & black pepper (and optional chilli flakes).

cut cheese in half to make 2 wheels, put them in the boiling mix - stir a few minutes and when the cheese is melted lift out the skins with a wooden spoon.

stir a bit longer... then tip the lot into the blender & whiz for a minute.

serve with more cracked pepper on the top! so YUM.

so - if you want to try the macaroni - just boil up a packet of that, drain & put back in the pot, tip the blended cauli soup over it... sprinkle cracked pepper and a little sprinkle of tasty cheese on top!

very easy and so nice!

I used to live in Melbourne years ago..i thought they had an IKEA somewhere on Maroondah highway mear blackburn or nunawading?? Is that gone now?

yeah coz they have great food too!! Although if you are already banded you would probably go for 6 meatballs..i am being banded in October..so i go for 16.. :(..anyway, that will all change i am sure!

Thanks Bron,

I really miss the Ikea that was in Moorabbin (Melbourne). They closed down and their only store is in Richmond now. I never seem to get up that way but maybe it's time I went and has a browse there.

Jan, not sure if you have a store near you but IKEA actually has a lot of those type of containers and they are soooo cheap..about $5 for a set of three good sizes..good seals..good quality..cheers, Bron

That's fantastic value for 50 bucks hey Linda. I recommend every bandit to get a c rock y, mine has been fantastic.

Lol Linda, you are always up with the bargains. Can you let me know when Aldi have those little sets of "Tuppaware" type containers on special again? The set I bought there a few months ago has been brilliant and I'm sorry I didn't buy twice as many.

Chickpea, Chicken & Corn Soup

1 BBQ chicken
1 tbspn olive oil
6 spring onions, thinly sliced
2 cloves garlic, crushed
2 teaspoons finely grated fresh ginger
1 x 1 litre carton chicken stock
1 tbspn soy sauce
1 x 420gm can creamed corn
1 x 420gm can chickpeas, drained
1 cup fresh coriander leaves, chopped roughly
half cup bean sprouts, trimmed (optional)

Method:

1. Remove flesh from chicken; discard skin and bones. Roughly chop flesh.
2. Heat oil in a medium pan. Add spring onions, garlic and ginger; cook, stirring, until onions are soft.
3. Add stock, soy sauce, corn, chickpeas and chicken. Simmer, covered for 20 mins.
4. Just before serving, stir in coriander and sprouts.

Soup can be made one day in advance. Keep covered in refrigerator.

This is a very tasty soup. We used to have it all the time before banding. I think it could be blended quite well for the mushie stage. Chezza

I made the cauliflower soup tonight and added camembert. My husband hates cauliflower but I gave him some and he loved it. I think some Stilton in it would give it a real zing. I will try that next time.

LMAO LINDA...... I WAS WAITING FOR YOU TO SAY THAT!!

This is hilarious! I KNOW about the stilton in the cauli soup and you are right IT IS DIVINE!!! But...(still laughing here) I omitted it on purpose because I don't seem to be able to control the quantities when there is cream or cheese in a recipe. With your chowder recipe I couldn't stop eating it and I thought I was going to burst my little weeny tum tum open!
