I love beetroot and fetta but not a fan of chopped parsley, any suggestions for alternatives to parsley would be appreciated.

Don't forget the easy peasy and very festive looking beetroot and feta salad I posted here a while ago. It's perfect for parties and BBQ's at this time of year and looks really beautiful.
Cubes of canned beetroot, cubes of feta and fresh chopped parsley. Doesn't need a dressing and is yummy!

When you have a family to cook for, it gets a bit depressing when you can't all eat the same meal. My kids love tacos or torilla with mince & salad. So i make up the mince make sure it's not too dry. Add a bit of BBQ sauce is yum! So on my plate I have a bit of mince, a bit of guacomole next to it and a bit of salsa next to that; sprinkle some grated cheese on the mince while its still hot. (I stir through my teaspoon of Benefiber too- great stuff - can't taste it and does the job)Great tasty meal and you don't feel left out. and my kids don't feel bad because mum can't have what they're having. and i didn't have to take the blender out!

I Have a great recipie for mince or chicken mince hamburger patties.
250gram mince,or chicken mince.
1/3 cup of hamburger helper
1/2 and onion finely chopped
1 egg
1/4 cup of plain flour
seasoning such as mediteranean or garlic herb seasoning
pepper and salt and 1/2 chicken stock cube.
Mix all ingedients together thouroughly in a bowl
pop into egg rings to shape and bake or fry them in a pan
for about 20 minutes or till cooked through

Hi all
This is something else I have tried and was ok
Chopped cabbage
Chopped leek
Chopped bacon I prefer the rashes rather than the already chopped stuff
Cook in frypan with a tiny bit of chicken or vegie stock until all cooked
Then add some light cream and stir through don't let boil
season with salt and black pepper.

Bluddy hell Linda that's fantastic news about your sexy top. I reckon Deb has dressed half of Melbourne with her hand-me-downs. She's a self confessed shopoholic and every lapbander within coo-ee has benefited from knowing her lol.
Still haven't tried the new soup...too many Christmassy things happening at the moment. I'll get around to it soon.

I wore one of Debs glittery ensemble tops on Monday night. Had to pin the top to my bra as it was revealing a bit much LOL. I have been waiting nearly 2 years to wear that top.

Did you use uncooked rice? I had some cooked so threw that in and I also only had a can of corn not creamed corn. It was very nice.

Everyone,
When Linda posts a soup recipe and says it's yummo, it means it's Y U M M M M O !!!!
I made her Bacon Chowder recipe one night and couldn't stop myself eating it - too damned delicious, I nearly burst my pouch!
This latest soup sure looks wonderful and I will definately give it a whirl. I never thought I'd see the day that I have to exercise self control around a soup but with Linda's gorgeous recipes I do!

Jan I have a new favourite soup and you know how much I love the chowder. I sent some soup recipes away and there was a curry chicken soup that I hadn't made, in my recipes. I just made it and had it for lunch. Yummo
CHICKEN CURRY SOUP
30G butter
3 rashers chopped bacon
2 finely chopped chicken breasts or thighs
1 chopped onion
1 crushed clove garlic
2 tsp. curry powder
2 tsp. plain flour
5 cups chicken stock (or water with stock cubes)
1 large grated carrot
1 can creamed corn
3/4 cup rice
pinch dry mixed herbs
salt chopped fresh parsley
Melt butter in pot and saute bacon,chicken,onion, garlic and curry powder for 3 minutes. Stir in the flour and the remaining ingredients except parsley. Bring to the boil and simmer gently for 40 minutes. Serve piping hot sprinkled with parsley. |

Gosh those chicken balls sound fantastic. It's JUST what I feel like right now.
Skidonk, I posted that beetroot and fetta recipe. There's no dressing...just chopped parsley. The tartness of the cheese compliments the sweetness of the beetroot beautifully. It's a GREAT salad for the festive season, it looks really Christmassy!

Judy (beep beep Barina!), we just had your thai chicken balls. YUM YUM YUM The mixture is rather wet and I only have a 12 large mu ff in tray so I made 12 large ones. I had 2 my hubby had 4 so we have 6 left. I bet they are just as nice cold. Thanks for the recipe.

Chocolate Mousse (healthy style)
3 tsp gelatin
2 tbs cocoa powder
1/2 cup water
1 375 can evap skim milk
1/2 cup artificial sweetner (Splenda)
1 tsp vanilla extract
Method
Combine gelatin, cocoa, water in microwave proof dish to form a paste. Heat in microwave for about 1 minute until gelatin dissolves.
Place chilled evap milk into a large mixing bowl. Using electric beater, whip for about a minute until milk is thick and foamy.
Beat in the sweetener, vanilla and gelatine. Spoon into small glass bowls and leave in fridge to set (about 2 hours).
I tried this one and loved it. Very easy.
