Made this one today -

Mushroom, onion and parmesan mini m u ffins
========================= ================
350 grams of mushrooms, finely diced
1/3 cup of parmesan cheese
6 eggs
1 medium onion finely diced
1 clove of garlic
salt and pepper to taste
1x 24 mini mu ffin tray

saute onions until golden. Add mushrooms and minced clove of garlic. Stir.

Whisk eggs. Pour over cooled mushroom and onion mixture. Spoon into greased mini m u ffin tray. Place into oven at 180'C for 15-20 minutes (until golden and puffed up).

The mini m u ffins will simple pop right out of the tray once cooked. Serve with your favourite sauce. Sweet chilli was nice with them.

Twenty-one 100-calorie snack ideas

Slice up half of a small apple and dip it into 2 teaspoons of peanut butter. The other half of the apple can be saved for later if you squeeze some lemon juice over it and tightly wrap it.



2. Ten almonds or cashews or 1 tablespoon nut butter (licked straight from the spoon!)

3. Slice a small avocado in half and eat it right out of the peel.

4. Boil 3 ounces of whole grain noodles and toss with 1 small fresh tomato, and 1/2-ounce hard cheese.

5. Spread 2 tablespoons of low-fat cottage cheese on 4 plain mini rice cakes.


Dip mixed raw vegetables into 1/4-cup fat-free ranch dressing.



7. Enjoy a small baked potato topped with 1/2-cup salsa and 2 tablespoons fat-free sour cream.

8. Fifteen strawberries dipped into 1/4-cup Cool Whip Lite

9. Munch on 45 steamed edamame (fresh, hulled soybeans).

10. Combine 2 tablespoons of mashed avocado with 2 tablespoons of fresh chopped tomato and stuff it into half of a small whole-wheat pita.


Slice up half of a red bell pepper and dip in 3 tablespoons hummus.



12. Top 6 ounces of plain fat-free yogurt with 1/3-cup fresh raspberries.

13. Smash a hard boiled egg and spread on a slice of Melba toast.

14. Savor 4 slices low-fat honey ham rolled in a lettuce leaf topped with 2 teaspoons honey mustard.

15. Try a slice of toasted raisin bread topped with 1 teaspoon light butter.


Top half of a small bagel with 1 ounce smoked salmon.



17. Enjoy a half-cup instant, sugar-free chocolate pudding.

18. One large celery stalk filled with 1 tablespoon peanut butter or light cream cheese.

19. Mix together 2 tablespoons water-packed tuna with 1 teaspoon of light mayonnaise and a dash of onion powder.

20. 10 jelly beans

21. Try 5 low-fat chocolate meringue cookies.

Try Roasting your vegetables allowed on Optifast: Onion, whole garlic cloves, broccoli, zucchini, egg plant, mushrooms, asparagus, carrots are some of my favourites.
Put them on an oven tray with salt and pepper and cook for about an hour on 160 degrees. When they are cooked you can eat as is, or whiz them in the blender with some stock snd make soup. Yum!

400g can chickpeas, drained
finely grated zest and juice of a lemon

Preheat oven to 200c. Line a baking tray. Place eggplant on tray and bake for 1 hr turning often. Wrap garlic in foil and add to tray in the last 20 min. Remove foil

Cool eggplant and remove skin. Roughly chop and place in food processor with rest of ingredients. Process until smooth. Season with pepper. Serve with vegetable sticks and crisp pita bread pieces. Makes at least 2 cups. Can be frozen.

Linda, Babaganoush is one of my faves. Have you made this actual recipe?

When I have made it, I used a bit of tahini but no chickpeas. Also I never used the skins of the eggplant.

I made the best soup i have made for ages today!! i used :
3 zuchinnis
just under 1.5 ltrs water
2 small onions
handful of diced bacon
2 teaspoons chopped garlic
about 3-4 potatos chopped
6 chicken stock cubes

brown the onion, garlic and bacon till cooked, then added in the potato, zuchinni, water and stock cubes, let simmer for about an hour or until all soft and cooked, then blended it with the stick mixer and was still abit chunky.

Verry yummy, and filling, dad said to write it down and make it more often as he loved it, thats different from my dad haha and it was made from top of my head aswell :)

my daughter is vegetarian and we use the mince all the time. It tastes great. We also love the same brand bbq sausages. they have no fat in them and taste just like a bbq sausage minus the grease and oil.

Ruby,

The vege mince is in a vacuum sealed packet in the refrigerated section. You normally find it next to tofu and those fake vege sausages.

Hi Pyretta

I tried this a couple of months ago when someone emailed it to me.

1. The biggest mug I own was not big enough, it overflowed and made a mess.

2. Be careful what oil you use. I used a canola oil, and that was almost all I could taste (yuck)

3. My daughter and I shared it. I managed not quite a quarter of it, she had a bit more, but we threw half of it out. So when it says it serves 2, probably more like serves 4-6 if you are talking bandits.

Thankfully we decided it was not worth it. Would be dangerous if you liked it.

This is definately something to have only as a treat or for a special occasion. I can only imagine the damage you could do having one of these every day.

5 MINUTE CHOCOLATE MUG CAKE

4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
a small splash of vanilla extract
1 large coffee mug

Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.
Pour in the milk and oil and mix well. Add the chocolate chips (if using) and vanilla extract, and mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts (high).
The cake will rise over the top of the mug, but don't be alarmed! Allow to cool a little, and tip out onto a plate halve and serve with a dollop of cream.

This can serve 2). And why is this the most dangerous cake recipe in the world? Because now we are all only 5 minutes away from chocolate cake at any time of the day or night!

I have found it in the refrigerated section. Usually there is a section that contains tofu, veggie burgers, veggie sausages and the veggie mince.

I know that not everyone has the same taste for different foods, but I love this new vegetarian mince I bought. It has less than 1% fat and is high in protein. It is soy / vegetable protein. I add Beerenburg tomato sauce to it and wrap it in Mountain Bread. Lovely stuff.

Potato and Bacon Soup

cooking spray
180g diced bacon
500 ml vegetable stock
2 cups of water
450g potatoes, peeled and diced into 1cm cubes
40g pkt French onion soup mix
1 t Italian herbs


1 Heat large saucepan. Saute bacon for 2 to 3 minutes or until brown and crisp.

2 Add stock, water, potatoes, soup mix and herbs. Bring to boil, stirring. Reduce heat to low.

3 Simmer covered for 8 to 10 minutes or until potatoes are tender.

Roasted Potato Soup

Ingredients.
6 medium baking potatoes
1 large onion roughly diced
6 cloves of garlic peeled
2 Tbsp. butter
1/4 tsp. pepper
3 cups chicken broth
2 cups water
1 cup thickened cream,

1 Scrub the potatoes throughly, or peel the potatoes, and cut into 1 inch chunks. Place the potatoes, onion and garlic on a shallow roasting pan. Drizzle with the butter and sprinkle with pepper. Bake uncovered in 220 degree oven 50 to 60 minutes until potatoes are brown, stirring occasionally.

2 Transfer the potatoes onions and garlic to a large saucepan. Stir in the chicken broth and water. Bring to just boiling, and reduce heat and simmer covered for 20 minutes until potatoes are very tender.

3 Using a potato masher, mash the potato mixture until smooth. Or put it through a blender. Simmer uncovered for 15 minutes more until slightly thickened. Stir in thickened cream and heat through. Salt to taste.

4 Sprinkle some grated cheese on top to serve.

Here's a couple of really yummy soup recipes...

Ham and Pea Soup

1 large onion, chopped
200g lean ham, chopped, I use soccerball
1 stick of celery, chopped
1 large carrot, peeled and chopped
2 litres water
6 chicken stock cubes
150g risoni pasta (looks like rice)
1 cup frozen green peas
pepper to taste


1 Coat a large heavy based saucepan with cooking spray. Heat, add the onion, ham, celery and carrot. Cook for about 3 minutes.

2 Add the water and stock cubes, bring to the boil, lower heat, cover and cook for about 5 minutes.

3 Increase heat, add the risoni, cook uncovered, stirring occasionally for about 5 minutes. Stir in the peas, cook until heated through. Serve seasoned with pepper.

This soup becomes extremly thick as the risoni pasta continues to swell.

I'm adding my egg wrap to the recipes.

1/2 a piece of Mountain Bread (paper thin bread at Woolies)
1 free range egg, scrambled with a lashing of 99% ff milk
add salt and pepper to taste, or fry a little garlic in the pain with the egg for something extra.

It makes one small wrap, about 10 cm's long.
