had a family dinner out last night, was a bit worried what I was going to order, but the chef (a friend) cooked a special dish for me. A grilled vegatable stack, capsicum, zucchini, eggplant, mushroom,tomato, with an eggplant reduction sauce and it was yummo, and all allowable vegies.

Gourmet Garden Salad


Gourmet Garden Salad
(Serves 1 - 2)


Ingredients•1 Cup of rocket
•1 Cup of baby spinach
•1 Medium tomato, quartered and then halved
•1 Small carrot shredded
•4 Small radishes, sliced thinly
•1 Teaspoon of dried oregano
• Balsamic Vinegar
•1 Tablespoon of fresh coriander, torn
•½ Medium cucumber, chopped in half centimetre semi circles

MethodAdd all ingredients into a large salad bowl, toss and serve immediately alongside a main meal or as a snack when hungry.


Veggie and Tomato Casserole

•2 Cups of Snow pea or green beans, chopped in half
•4 Medium tomatoes, finely chopped
•1 Large zucchini, halved and sliced into half centimetre semi circles
•1 Small onion, finely chopped
•2 Cloves of garlic, crushed
•1 Medium red capsicum, sliced into thin slices
•1 tablespoon of olive oil
•1 Cup of water
•Salt and pepper as desired to taste
•1 Tiny red chilli, seeds removed and chopped finely (optional)

Method1.Heat olive oil in a large saucer pan on medium to high heat.
2.Add onion, garlic and chilli, combine and toast until just getting golden.
3.Add zucchini, snow peas and capsicum, combine and cook until half cooked.
4.Add tomatoes, water, salt and pepper, mix well and simmer for 15 minutes.
5.Serve hot or chilled


Cauliflower & Leek Soup





2 cups of water with 2 chicken stock cubes

Cut up a small cauliflower and a leek and add to the liquid
add salt and pepper and just simmer until the cauli is tender and starting to fall apart.

Get out your slender blender and blend until smooth and creamy.....

a little bit of curry while it is cooking would be alright too........

Just had my shake warmed up...thanks MK it was yummo. I want another one now haha.

Just looking for some soup recipes and found these and thought I would put them here for anyone looking for ideas.

Tomato and Basil Gazpacho

Ingredients
4 cups (1 litre) tomato juice
4 roma tomatoes, seeded and co *** ly chopped
1 cucumber, peeled, seeded and co *** ly chopped
1 small yellow capsicum, seeded and co *** ly chopped
3 spring onions, finely chopped
¼ cup (60 ml) freshly squeezed lemon juice
¼ cup co *** ly chopped basil
1 clove garlic, minced
¼ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon Tabasco
Preparation method
1. Combine all the ingredients in a large jug. Refrigerate for at least 1 hour before serving. Gazpacho is always served cold.


Carrot and coriander summer soup
Ingredients
1 tablespoon of olive oil
4 large carrots, peeled and roughly chopped
1 large onion, roughly chopped
900ml vegetable stock
1 large bunch fresh coriander, roughly chopped
salt and pepper to taste
Preparation method
1. Heat the oil in a large saucepan over medium heat.
2. Saute the carrots and onion for a few minutes until the onion has softened a little.
3. Pour in the vegetable stock and add the coriander. Bring to the boil, and cook until the carrots are tender, about 10 minutes.
4. Remove from heat and allow to cool slightly.
5. Puree the soup until smooth, using a hand blender or food processor. Adjust seasoning. Reheat before serving if necessary.

Light Vegetable Soup Serves: 4



Ingredients

1 litre good quality vegetable stock

2 carrots

2 sticks celery, chopped

1 onion, chopped

¼ cup roughly chopped parsley

400g tin crushed tomatoes

¼ cup finely shredded basil

1 Tablespoon rosemary, finely chopped



Method

Bring stock to a boil in a large saucepan, Add carrot, celery, onion, parsley and tomato and simmer gently for 30 minutes.

Stir through basil and rosemary and season to taste.

I think that with all due respect to the manufacturers, if you like your optifast hot, have it hot. If you are on the optifast for an extended length of time it would be VERY important not to degrade the nutritional value by heat but since most of us are only on it for two to three weeks its not going to make that much difference.
Check with your dietician if you're unsure.

If you read the side of the Optifast soup box, it clearly says you can mix it with hot (not boiling) water. Also gives an option of 200ml cold water, cover and microwave on high for 1 minute.

Obviously we'd all hate drinking the soup cold. Just be aware that it should never be boiling, just warm to the touch.

omg, i have never eaten pizza since knowing how many points in the weight watchers days, now and add for it on tv almost (I said almost) make me want some. bugger. i'm fully watered and black tea'd out. i should watch u chewb instead- no tv adds!

It may well have changed since I did it, but on the Optifast web site it did say no hotter than 60o for the vanilla or chocolate shakes.

good luck all but dont forget to hve your daily allowence of veges either in a nice vege soup or a stirfry they keep the hunger away

It's warm but not hot. Your best bet would be to use a thermometer if you want to warm it.

60 deg is about a good drinking temperature. I actually had a thermometer once to test it.

I almost always had my shakes warm. I did Opti just on 12 months ago and couldn't stand having it cold at that time of year.

Optifast shouldn't be heated over 60oC as the temperature denigrates the nutritional value of it.

has anyone tried the choc opti hot, I mixed it with a little warm water first to get all the lumps out then added more hot water to a large mug and its yummy, a nice creamy hot chocolate, espesially nice at night time.

My nine year came up to me last night, hugged me and went, "Mummy, I can get my arms ALLLLL the way around you now, where before I could only touch my wrists. You are losing weight." lol I am, as of today, on day four, and just over 2 kilos down and am going ok. At least I have my cheer squad!

My scales don't go up enough to know if I have lost. Although the family says I have. 2 weeks to go till op, 3 weeks until off optifast :)

Kerrie, Glad to hear that your tummy has settled down.I don't mind the soup but I'm glad I only have another week of optifast. I really need more variety in my diet. Today my scales showed a loss so I am encouraged by that to stick to it for another week.

My dietican said I am only allowed to have the choc, vanilla or chicken soup. And to put the benefibre into each. I didn't with the last 2 today and bowels have settled.

The soup I tried and couldn't eat it, its revolting. I have heard a lot say the vanilla is terrible to didn't buy it as I didn't want to get a box to find I couldn't drink it. So all mine have been the chocolate.

Unfortunately I think I'm probably going to need another one right after because I know how hard the hospital bed is going to be (had to do a sleep test at the same place a week or so ago)

Ohhhh a massage, what a great idea! I didn't think of that, but if we are in for a bit of pain and adjustment to our lives for a week or so, I think we deserve a bit of pampering first. I'm running with this one!

Hi Katie, I thought I'd add that I too have had a lot of strange aches and pains all through the opti stage. I asked my GP because I was a little concerned but he didn't think there was anything wrong. Just one of those things I guess. Oh well, I've booked in a massage for the day before surgery (12/5) so hopefully that'll put everything back in place :) fiona
